What is Raul cooking for November?

As most of you know, this last month has been a super busy month for Raul with juggling work and getting ready for the new arrival in his family, so fuelling his body properly with good, healthy, tasty, nutritious food was more important than ever.

And with such limited time, he relied on some of his all time favourite, QUICK and EASY breakfast options to start his day full of energy and feeling full for longer, like the AVO-EGG TOAST!

Ingredients:

- 1 Avocado

- A slice of bread of your choice (Raul’s favourite is the Genius gluten free Toastie loaf!)

- 1 free range egg

- Half a lemon

Method:

1.Scoop the avocado out of it’s skin and place it in a bowl.

2. Squeeze half a lemon into the bowl.

3. Add salt, pepper, & chilli flakes into the bowl.

4. Mash it all up! (Raul’s top tip is to use a potato masher!).

5. Spread the Avo mash all over a slice of toasted bread.

6. In a pan, fry an egg and place it on top of the avo mash toasted bread.

7. Sprinkle chilli flakes and sea salt on top and tuck in!

All in all, this won’t take any more than 10 minutes...QUICK, EASY, YUMMY & NUTRITIOUS!
