Raul’s Sweet Potato and Spinach Frittata

This delicious, filling frittata is perfect for breakfast, lunch or dinner. You can eat it piping hot fresh out of the oven, or even stick it in a tub and take it with you on the go as a healthy snack!

Ingredients:

6 large eggs

1 cup of fresh cream

1 tsp of sea salt

½ tsp of fresh ground black pepper

2 medium sized sweet potatoes

2 tbsp olive oil

200 grams of fresh spinach

½ red onion

2 cloves of garlic

200 grams goats cheese

Preparation:

1. Preheat the oven to 200°c.

2. Peel, chop and sauté sweet potatoes in 1 tbsp of olive oil over a medium heat until they are tender and golden.

3. Grab the spinach and sauté it along with chopped onions and garlic in the remaining 1tbsp olive oil for 8 minutes, then mix it together with the sweet potatoes.

4. Whisk the eggs, cream, salt and pepper together and pour the mixture over the vegetables then cook for 3 more minutes.

5. Put the goat’s cheese on top, then pop it in the oven and bake from 12-14 minutes.

6- Slice and serve piping hot and enjoy!!
