Raul’s fully loaded super omelette

Ingredients:

1 tablespoon salted butter

3 mushrooms                                                          

½ chopped onion

½ chopped red pepper

3 eggs

1 ounce (30ml) double cream*

¼ teaspoon salt

⅛ teaspoon freshly ground black pepper

½ ounce (14g) grated cheddar cheese*

A handful of spinach

1. Melt the butter in a medium pan over a medium heat. Add vegetables and sauté until soft, 5-7 minutes. Remove vegetables from pan.

2. In the same pan, melt the remaining butter. In a small bowl, whisk together eggs, cream, salt and pepper. Tilt and swirl the pan so the butter coats the entire bottom. Add the egg mixture and tilt and swirl the pan in the same manner.

3. Cook without stirring. As the egg around the edge sets, use a spatula to gently push the egg away from the sides of the pan and tilt the pan so the egg mixture in the centre can get to the edge.

4. When the entire egg mixture is set, add the vegetables on top of one half of the omelette. Sprinkle half of the cheese over the vegetables, then gently fold the omelette in half to cover the vegetables. Slide the omelette onto a plate and sprinkle with the remaining cheese.

Serve immediately and….enjoy!
